Each chafer is a folding stainless frame holding a full-size water pan, with a food pan sitting in the water above the fuel. The water spreads the heat so nothing scorches and nothing goes cold at the edges. Two of the four come with a single full-size 7.5 litre pan for the main dish; the other two come with a pair of 4 litre half pans each, which is how you get rice and vegetables, or two curries, from one chafer.
The gold finish looks the part on a wedding table, and the food and water pans lift out for washing while the frame wipes clean. The frames fold to save storage space between events.

The food pan never touches the flame. It sits in a full-size water pan, and the fuel heats the water, which heats the food gently from underneath. That is why a chafer can hold a curry through a long service without a skin forming or the bottom catching. Fill the water pan with hot water from the urn and it holds temperature from the first guest to the last.

Two chafers carry a full-size 7.5 litre pan each, for the dishes people take the most of. The other two carry a pair of 4 litre half pans, so one chafer can hold rice and dhal, or roast vegetables and gravy, side by side. The serving clip in the box handles pasta, steak, soup and chicken.

The frames fold, and the food pans and water pans lift out, so a set of four takes far less room than four rigid chafers. For a caterer that is the difference between one trip and two; for a hall or a church kitchen it means the set lives on one shelf between events.
