The body uses cast iron, which is why it weighs 48 kg and why it does not walk across the bench when it is kneading a stiff dough. Power goes through a gear-driven transmission, so the speed you set is the speed you get, batch after batch. The bowl, hook, beater and whisk are all food-grade stainless and come off for washing.
Three speeds cover the work of a small kitchen. Low for bread and pizza dough, middle for fillings and batters, high for cream and egg whites. The maker rates a batch at up to 1.5 kg in the 14 litre bowl.

The dough hook is for bread and pizza dough, where the work is folding rather than beating. The flat beater is for batters, fillings, mashed potato and buttercream. The whisk is for anything that needs air in it. All three fit the same planetary head and come off for washing.

The bowl rides up and down on a lever adjuster at the side, so you can drop it to add flour or scrape the sides, then bring it back up without touching the head. The guard gives a view of the mix and stops the motor the moment it is opened or not securely closed, which is the difference between a commercial mixer and a big domestic one.

A 14 litre bowl takes about 1.5 kg of dough at a time, and it will do the next batch straight after. The cast iron in the body and the low first speed are what let it handle a stiff dough without walking across the bench.

Stop it before you change speed. It is a gear-driven machine with three set speeds, and changing under load is hard on any transmission.
The maker rates it at up to 1.5 kg in the 14 L bowl. Stiff, low-hydration doughs should stay at the lower end of that; wetter doughs and batters are easier on the machine.
Bowl, hook, beater and whisk come off and wash in the sink. Wipe the body and the guard with a damp cloth; do not hose the head, the motor is inside it.
